wild garlic pesto with gorse flowers

After posting about wild garlic pesto the other week, a few people asked for a recipe. It’s very much a judge-by-eye sort of thing but you need:

* a large handful of washed, dry, fresh wild garlic
* roughly the same of grated parmesan
* and the same again of dry-toasted pine nuts

Combine all the ingredients in a pestle and mortar or food processor and gradually add good olive oil until it reaches a pesto consistency. Season to taste. Stir the final sauce into cooked pasta or use wherever you would use a traditional basil pesto.
